This weeks article and questions are about Diabetes – this is a condition that not many people realise can be caused by an unhealthy lifestyle.

Spicy Chicken Kebabs

Ingredients:
Marinade:

  • 1 garlic clove, minced
  • 2 teaspoons finely grated fresh ginger root
  • 2 tablespoons finely chopped fresh coriander
  • ½  cup lemon juice

Kebabs:

  • 2 free range skinless half chicken breasts, cut into cubes
  • 2 large onions, cut into pieces suitable to place securely on skewer
  • 1 large mango, slice
  • 12 mushrooms, whole or halved depending on size
  • 1 green capsicum, seeded and cut into pieces suitable for skewer

Mango Sauce:

  • 1 fresh mango, chopped
  • 1 tablespoon parsley, finely chopped
  • 1 garlic clove, minced
  • 1 teaspoon fresh grated ginger
  • pinch chilli powder
  • 1 teaspoon allspice
  • 1 tablespoon honey

 

Method:

  1. Combine all marinade ingredients and marinade chicken overnight.
  2. Arrange chicken pieces with other ingredients alternately on skewers. Grill or barbeque until chicken becomes golden.
  3. Blend all of the mango sauce ingredients in a blender until fine.
  4. Serve with the kebabs.
  5. Sauce can be served hot or cold.

The Importance of Preventing Diabetes

To understand the real importance of preventing diabetes it is vital to understand the disease and what factors could increase you chances of developing diabetes.  Diabetes occurs when a person usually suffers from high blood sugar levels which can not be regulated within a safe level by the body.  This regulation of the body’s blood sugar levels is achieved by the release of insulin from the pancreas which reduces the amount of sugar in the blood stream.

When we eat the glucose which is contained in many foods it enters the blood stream so that the body can use the glucose as a form of energy, particularly by the brain.  The pancreas then releases insulin into the blood stream so that it can move the glucose out of the blood steam and into the muscles, liver or fat cells where it can be utilised either immediately or at a later date.  This is why diabetics have such problems as they don’t have enough insulin to remove the glucose from the blood stream so it stays in the blood stream where the body is unable to use it for fuel.

Unfortunately not all types of diabetes are preventable however most case can be prevented.  There are three main types of diabetes which are...

  • Type 1:  These types are often diagnosed in children however some adults can still develop this type of diabetes.  This type of diabetes can not be prevented and these people often require injectable insulin throughout the day to control their blood sugar levels.
  • Type 2:  This is the most common form of diabetes and usually occurs later in life and can often be avoided through maintaining a healthy lifestyle.
  • Gestational:  This type of diabetes only occurs during pregnancy and results as a consequence of particular hormones that the placenta releases during the pregnancy.  Again this type of diabetes can not be prevented however a healthy lifestyle will reduce the amount of intervention required and reduce the risk of abnormalities which can occur in the foetus.

Although diabetics have some risk factors which can not be avoided like a genetic disposition most risk factors can be reduced.  One of the most important factors to help reduce your risk of diabetes is to avoid obesity by limiting the amount of foods which contain high amounts of processed sugars and by performing some form of regular exercise to help the body burn off any excess glucose which is being stored in the body.  People who also suffer from high blood pressure and high cholesterol levels are also at a greater risk of developing diabetes.

Diabetes can be a debilitating disease which impacts greatly on the lifestyle of the individual whilst greatly increasing their risk of developing complications which can have devastating effects.  Look after your body with regular exercise and a balanced diet to ensure your body will function optimally for as long as possible.

Chromium is classed as a trace mineral and contained in a variety of foods including meats, egg yolks, mushrooms, nuts and yeast. A variety of recent studies have suggested chromium may be beneficial in the maintenance of carbohydrates and lipid levels within the body. It is through this function that people who suffer from type II diabetes or other mature onset related diabetes may benefit from the stabilisation of their blood sugar levels. It is also believed that this product can control the uptake of glucose into the cells and that it promotes the function of insulin in the body. The machines are called a blood glucose monitor and they can give an indication of how much sugar is in the blood at the time of measurement. This is achieved by using a drop of blood which is smeared onto a window and inserted into the machine for a reading which can usually be attained in under a minute.
